Chef Kaneko carefully selects domestic ingredients and presents them in a simple
Italian and French style.
Chef Kaneko is aware that selecting ingredients is a vital first step in the art
of cooking. He uses these ingredients to express the flavors of the four seasons
found only in Japan.
Succulent meat roasted on the bone over hot charchoal, seafood selected for
freshness and firmness, and vegetables grown through direct dialogue with
framers. Regardless of the genere, we convey the flavor of the original
